Butter Shtick is a multi-faceted creative outlet of Samantha Gainsburg, a pastry chef based in Seattle, WA. Drawing from her time in New York City, Las Vegas, and Seattle, as well as her multiple trips to Turkey, Butter Shtick embodies these experiences through beautifully crafted and delicious pastries. Particularly important is the commitment to seasonality, locality, and sustainability through the use of local flours, fruits, and botanicals. Butter Shtick products can be found through pop-ups, custom orders, and workshops. 

Every Butter Shtick pastry is crafted with an obsessive attention to detail and unique yet refined flavor combinations.  

Samantha studied and worked in fine art before transitioning into baking—at first a hobby inspired by her late Poppy, who had owned a deli in Brooklyn. Her work, at the intersection of art and food, has taken her through prestigious bakeries and kitchens such as Sunday in Brooklyn (NYC), She Wolf Bakery (NYC), Sea Wolf (Seattle), Mamnoon (Seattle), the Melissa Coppel School (Las Vegas), and Canlis (Seattle).

She began holding pop-ups in August 2022 when she concurrently organized the Seattle Bake for Abortion Sale, a city-wide bake sale that raised nearly $20,000 to support reproductive rights. Since then, she has had numerous pop-ups often linked with humanitarian causes close to her heart.
